Dispersion methods involve breaking big particles to particles of colloidal size. This may be done mechanically using a colloid mill. The fine particles are then stirred in thr dispersion medium,usually water. The homogenizer used in the preparation of cheese and butter is an example of a colloid mill. Emulsions are prepared by beating or shaking one liquid into another. Then a third substance is added to make the emulsion stable.Another method employs a chemical reagent gor bteaking big particles. The reagent is called peptizing agent. The process is called peptization Clag is peptized by NaOH to form colloidal clay.
